Pink Saturday - Cherry Delight


Cherry Delight

Okay, this is more red than pink,  but I lost track of time and oops!  forgot today was Saturday .... I was out of sync all week.  Tuesday is usually my assistant's day off, but this week she swapped it for Wednesday.  So Tuesday felt like Monday or Wednesday and Wednesday felt like Tuesday....I was so mixed up.   
Yesterday my Dad ran me ragged.  We started a little bit of Christmas shopping, we went to Sam's Club (not just for the Samples - that day is always a farce), and then on to the grocery store to get our turkey (23 lbs for 10 people) - I think we'll have enough - don't you?   I actually filled my gas tank for  $1.71 per gallon.  $18.00 to fill my tank! Our day out always includes lunch and we chose Chili's this week.   I have the same thing I always have (how predictable) the Chicken Crispers with the loaded mashed potatoes, and my Dad had his Baby Back Ribs.
Oh yes, onto the recipe.....
Cherry Delight is a quick and easy version of a cheesecake dessert.
We have to make it for every holiday because everybody in the family loves it.  It is light and refreshing after all the heavy food.

Crust:
3 cups of graham cracker crumbs
1 stick of butter (melted)
1/2 cup sugar
Mix and press into the bottom of a 9x13 pan

Filling:
2  8oz packages of cream cheese (softened to room temp)
1 1/2 cups of powdered sugar
1 8 oz container of cool whip
1 can of cherry pie filling

Mix cream cheese and powdered sugar with mixer until light and fluffy, fold in Cool Whip.  Spread mixture over the graham cracker  crust.  Refrigerate until firm.  Top with cherry pie filling.

     I apologize for my lateness today, I finally re-upholstered my dining room chairs.  Nothing like a holiday to motivate me to get my projects done!

Thanks for stopping by my Pink Saturday yesterday and the nice comments! (that is actually LAST year's tree - we put our's up the day after Thanksgiving) I'm trying to get around to everyone and that usually takes me two days - especially with all the holiday things we've been doing! The dessert looks and sounds delicious! Anything with cream cheese and I GO FOR IT! ha, ha. You really should give scrapbooking a try! YOu can be as elaborate or simple as you want - its up to you! An people always seem more interested in looking at your pics than if they are just stuck in plastic sleeves. Oh when I read your post for Pink Saturday I smiled...perfect! Your post is similar to my Friday and Saturday posts in that if you read my TGIF you "MAYBE" could have been like the lady in it..*lol*...AND I posted my PINK Saturday with something that was red and white but some of the colour was so pale I passed it on for PINK. funny actually.
AND Robyn you do know that red cherry filing and white cream cheese and cool whip make PINK!! so you were right on.

in reply to your question re Prosecco you can have it with your Turkey, we have done that before with Chicken and Turkey.

We are having Melon and Prosciutto
for starter and Prosecco goes perfect with that too.

How exciting that your nephew was wed in Italy and blessed by the Pope, so cool!, did you go to the wedding?.

I love anything Giada D. cooks.
