Café Latte’s Famous Turtle Cake
Cake Ingredients:
• 1 Egg.
• 2/3 cup Vegetable oil.
• 1 cup Buttermilk.
• 2 cups Flour.
• 1 3/4 cups Sugar.
• 1/2 cup Good quality cocoa.
• 1 tsp. Salt.
• 1 tbsp. Baking soda.
• 1 cup Hot coffee
Frosting:
• 1/2 cup Milk.
• 1 cup Sugar.
• 6 tbsp. Butter
• 2 cups Good-quality semisweet chocolate chips.
• 3/4 cup Caramel.
• 1 1/2 cups Toasted pecans.
Prepare oven and pans: Preheat oven to 350 degrees. Grease 3 (9-inch) cake pans.
Cover each bottom with disk of parchment paper.
To make cake: In bowl, combine egg, oil and buttermilk. In large separate bowl, mix
together flour, sugar, cocoa, salt and baking soda. Gradually add wet ingredients to dry
until well mixed. Gradually add hot coffee. Scrape batter into prepared pans.
To bake cake: Bake for 25 to 30 minutes, or until toothpick inserted into center comes
out clean. Let cake rest in pans for 10 minutes. Turn out onto wire racks to cool.
To make frosting: Mix sugar and milk in saucepan. Add butter. Bring to a boil.
Remove from heat. Add chocolate chips to pan. Using wire whisk, mix until smooth. If
frosting is too thick or grainy, add 1 or 2 teaspoons hot coffee.
To assemble cake: Place one cooled cake layer, top-side down, on cake plate. Spread
with one-third of frosting, pushing it out gently from edges to make a petal effect.
Sprinkle with 1/2 cup pecans, Drizzle with 1/4 cup caramel. Add next layer, again
top-side down. Repeat frosting and sprinkle with 1/2 cup pecans and drizzle with 1/4 cup
caramel. And final layer top-side up, frost with petal effect and finish with remaining
pecans and caramel.

Oh, we love going to Cafe Latte whenever we visit DD in Minneapolis (actually, we love ALL of Grand Avenue).
And this cake is amazing! I made it only once after our first visit __ for my waistline< it is preferable to have it at the cafe!
Believe me, I'm slowing down to print this recipe. There's no doubt that has to be delicious!

'EVERY' time I return to Minneapolis/St. Paul I make time for a quick visit to Cafe' Latte and I am remembering all the great meals ++++ desserts! I love walking up the stairs to eat and people watch.

Your cake looks wonderful - everything I love - nuts, caramel, & chocolate! Yum! The Danish on my blog today is so easy it doesn't need a recipe. Just take Pepperidge Farm Puff Pastry and cut each sheet into 4 squares. Run some canned pie filling down the center, fold over as the picture shows, brush on an egg wash, and bake 400 degrees for 20 minutes. Sprinkle with powdered sugar. How easy is that? yummy! you commented on my doing the guy next door's grass...I love him like he is one of my kids! he is a 27 year old bachelor...just the cutest thing...he's not only allergic to grass...and lets Brayden mow for him all summer...but he found out he has cancer all over his body from the war in Afghan...I feel so bad that someone so nice and so young is so sick...it is the least I can do.
He lets me plant what ever I want...and listens when I boss him around...and he loves the kids to play in his yard with his dog and cat! Now...why not help him out? I know you would do the exact same thing...just cause you are you!
