It's Dumpling Monday!

Okay, I suppose it could be Dumpling Monday somewhere...

The weather was damp and chilly today, so I was craving something down home and comforting.  Something my Gramma would make.    How about some country style pork ribs with  grated potato dumplings?

The dumplings are easy to do.   

Peel potatoes and grate with the original blades of your food processor
 until you have about 5 cups. 

Add as many beaten  eggs as you have cups of potatoes, hence 5 eggs.
Add them one at a time - just in case you get a funny egg. (It has happened
to me. Yuck!)

Add just about as much flour as you have potatoes.   Add it one cup at a time 
mixing it in.  You may not need to add the full final cup - mix it in 
until you have a pasty consistency.  Somewhat like oatmeal.

Drop by tea spoons full into a large kettle (5-6 qt) of boiling water.
Continue spooning them into the boiling water until you have 
about one layer.  Give them a quick little stir so they don't stick to the bottom.

When they float to the top  I leave them for just a few minutes.
Then I remove them with a slotted spoon.




My family loves to eat these with the country style pork ribs,
sauerkraut and baked beans.  
I prefer to eat them with butter.
I make such a large batch because I love to have leftovers.
The next day I fry them with diced bacon, diced onions, 
and scrambled eggs. 

I'd love to show  it to you with the dinner,  but my family wouldn't give me a chance,
they were digging in before I even had a chance to sit down......

I love dumplings, I've never had them with potato's in them...just eggs and flour in soups and stews...num! :D

I am SOOO hungry now!!! Those look easy and delicioous too. I've never made them before but I will have to now! I really like the idea of frying them with diced bacon and onions....YUUUUUMMMMMM!!!!

Hi Robyn,

I came here today to tell you about a pair of Annie & Andy dolls that I came across today while cleaning up in our loft. I thought my granddaughters claimed them, because I didn't see them for a while. But they had them wrapped up in a blanket and I didn't realize it. They were made by one of the crafters that brought things into my boutique. It even has the name they went by and the date on them, Pine Wood Designs
'89'.

Now to comment on your Dumplings.....I think they are the same as what my Mother-in-law made, and my kids and I have made them a few times also, but not in a while. In Italy they are called Gnocchi and seved with sauce over them, just as you would spaghetti. I'll have to look up the recipe and see if the ingredients are the same. My kids ate them with butter too and grated cheese. I've even sauted garlic and onions in butter and drizzled it over them. Now I'll have to make them your way. I love a new recipe.

Hey Robyn,

Check out my latest Halloween decorations, when you get a chance. They are more the type I've done in the past, I'm feeling better about this look. I think I'll stick with the taditional look in the future.
