Delicioso Enchiladas!

I have to give credit 
for this YUMMY
recipe to 
Tyler Florence!

1 1/2  pounds  boneless skinless chicken breasts
seasoned with S&P and  2 tsp cumin  and smoked paprika
I red onion , chopped
2 cloves garlic minced
1 c. frozen corn (optional - I don't always add this)
1 can diced green chiles
1 can diced chipotle chiles
1 can fire roasted tomatoes
1/2 tsp all-purpose flour
16 corn tortillas
1 1/2 cup canned enchilada sauce
1 cup shredded cheddar/jack cheeses

Brown chicken with seasoning then remove from pan.  Add onion,  garlic, canned chiles and chipotles,  then add the tomatoes  and saute for about a minute.
Shred the chicken into strips and add back to the mixture.   Dust with flour to help set.
Microwave tortillas  on high for 30 seconds to soften.  Coat the bottom of 2 (9x13) pans with 
a ladle of enchilada sauce.  Dip enchilada into sauce to lightly coat.  Spoon 1/4 cup of chicken mixture into each tortilla.  Fold over .  Place 8 enchiladas in each pan - seam side down.  Top 
with remaining enchilada sauce and cheese.
Bake for 15 minutes in preheated 350 degree oven until cheese melts.  Garnish with sour cream, scallions, chopped tomatoes, cilantro.  

Also you can just layer it in  the pan like lasagna.  Enchilada sauce down first. Dipped tortillas Chicken mixture, Cheeses. Etc. for 3 layers.  I do this if I am in a hurry.  Also, sometimes I cheat and use a rotisserie chicken instead.

Outdoor Wednesday!

I think the squirrels were 
very busy this Winter.


Now Jacob will have to get busy
in the woodshop ....

Sunday Favorites - Raggedy Ann Revisited

I think that this is a great idea
because we can shake the cobwebs
off an older post and share them
with you all again.


Dear, Dear Raggedy Ann.  She is only 45 years old.
The stories she could tell. 
She was with me since I was an infant.  I took her everywhere.
I couldn't go to sleep without her.
I used to launder and iron her little clothes.
She rode along on my trike and then in  my flowered bike basket.
I brought her along to my Gramma's house for a summertime visit (1970).
Against my wishes, I left her behind when I went to visit cousins.   Pepe' the Mn. Poodle
chewed off her foot!   My Gramma called my Mom LONG DISTANCE during the DAY 
so worried about telling me!   My brother, 5 years older than me, (age of 12) had to 
sew on a new foot constructed from an uncle's black sock.  Can you 
imagine the "goings on" in that house all afternoon.   My Gramma
was afraid to show me when I returned.   I wanted to cry, but I was a big girl 
and acted like it was okay.
Now let's fast forward to the 1990's.
I had the cutest little Miniature Schnauzer,
BusterBoy.
Buster was such a good boy.  He was very smart.
He could do a lot of tricks.   He was my baby before I had my son.
He was my true companion.   
I had Raggedy sitting on a rocking chair in my bedroom.
I walked into my room to see her lying on the floor 
with her eyes ripped off!  Whatever possessed him to do that - I don't know.
I just don't know how to repair her.  I don't think that I can.  
Her material is soooo old.  45 years old.  
She sits on my closet shelf.  Staring at me with her poor 
little shoe button eyes every time I open the door.
I'm afraid to take her out of the closet.   I don't want to lose her eyes.
Afterall, she still means so much to me.
And Jacob pointed out through it all she still wears her smile!

PUCKER UP FOR FOODIE FRIDAY!

Nothing says spring like 
oh so Zesty
and Refreshing
Mini Lemon Meringue Tartlets

You know me, I love to bake things that require
multiple steps and create the largest mess 
in the kitchen.

I adapted this recipe from 
She made them in mini pie tins,
but I chose to put them
in muffin cups.
I thought that they would be cuter...

Jacob sure loved them.
They were the perfect size 
to just pop right in!

In-between each step,
I had to chase 
a little Downy Woodpecker
from the front of our cedar house.

I would be mixing away 
and Miles would come 
to get me - 
Mom, the Woodpecker's Back - 
Hurry Up -Hurry Up!

It looks like I have 
to dig out the big owl eyes
or some flashy old CD's
to scare the little guy away.

Today it was a beautiful 75 degrees,
but a bit windy.  
But who's complaining - 
it beats winter any old day!

Lucky me,
Jacob discovered a new 
vintage vinyl record store
closer to our house.

So after today's A&W Mama Burgers
and root beer floats,
we popped in and picked up
some Led Zeppelin,
Stevie Ray Vaughn,  Jethro Tull,
Joe Walsh and Foreigner.
At $3.99  each they were a bargain.

Well, you can all think of me
sitting my day  away at seminars today - 
All about molars and fluoride
and root canals.
This weekend is the 
Annual
Minnesota Dental Convention.
When I return I will
stop by our dear Gollum
to check out 
all of your wonderful recipes
and foodie ideas.

Foodie Friday! & A little of This'n'That!

It's Foodie Friday!
Everybody's Favorite Day

Today I am sharing 
with you 
a simple and SWEET
way to prepare 
Candied Sweet Potatoes.

I tried to gussy up the recipe...
Once  I baked real sweet potatoes -
they wanted these instead...
I tried Paula Deen's recipe - 
you know the one - 
the sweet potato balls rolled in coconut.
Nope they didn't want them....
I tried whipping them - 
They actually got mad at me!

They wanted their
Sweet Potatoes with Peeps on Top!


Easter was a very special day at our house....
It was my niece (& Goddaughter) Amanda's birthday!
We had "Eastery" wrapped surprises for her!

She wanted a marble cake with whipped frosting.
I didn't have time to make it for her
so she got one from Sam's Club instead.
And of course, the only cake they had left
in that combo was the sheet cake.
Do you think we had enough for 8 people?

We had an egg hunt for the "kids".
You know the guy on the left...
Then there is Amanda - our birthday girl,
Allen, Megan and Aaron.
I hid golden goose eggs  
(filled with cash
to make it worth-their-while)
 around the back yard.
While we were cooking,
Gramma noticed through the window
 that an egg was missing
from it's hiding place.
We ran outside and looked everywhere...
It was no where to be found.
Jacob swore up and down 
he didn't touch it.
Luckily, I had another egg in the house
and some extra cash,
 We made the "Kids" 
search for them ASAP after they arrived.
(Later Jacob and Grampa found the egg - 
still intact - money and all -  buried in the garden leaves.)

Speaking of egg hunts...
Miles participates in an egg hunt
every year.
It's so cute,
Jacob places dog treats in plastic eggs
and hides them around the house.
Then he tells Miles 
"Start Looking".
He searches and searches.
When he spots one 
He rushes over to it 
and tells Jacob 
to open it up for him.


I can't believe he remembers 
how to do it year after year....

I think a boy would enjoy that as well.

A Happy Easter Foodie Friday!

I made a batch of sugar cookies....

Turned my kitchen into a disaster area....

There are some little brown 
and
some little white bunnies.

Finally, they got there fluffy 
little cotton tails!


We put them into little bags....
to use as little favors.
The girls get the 
pretty little white ones.


The guys get the brown ones.

The cookie jar gets the rest!

I just wanted to share 
this sweet little bunny
with you...
My Dad made this for me
many decades ago.
I cherish him
and I NEVER EVER put him away!

BLUE MONDAY & PART ONE: CHOOSING FABRICS FOR MY LIVINGROOM

Blue Monday!

Nope, this drink 
is not a
"Sandra Lee Cocktail Time"
concoction.
This is actually a 
Pomegranate Peach Limeade
from 
Red Robin.
Jacob had to give it a try.
He gave it two thumbs up.
Also, it was "bottomless".....
Which I give 
"two-thumbs up"!
I hope you have a 
Red Robin near you,
because the food is really good.
The atmosphere is a bit
noisy though, so it's hard  to 
carry on a conversation
if you go with a group.


Okay, now here we go - 
I have finally decided to 
re-decorate the living room.
Afterall, my furniture 
has only been around 
for 15 years....
Heck, I bought that
when I was expecting Jacob!

I want something fun,
fresh, timeless
(you know it's got to last 
another 15 years....LOL!)

This is just round one.
I'm very indecisive - so
this ordeal will take awhile.

I'm needing a sofa,
a loveseat, a chair 
with a  matching ottoman
and an accent chair.





I have decided that the green fabric
is too avocado and it has a 
shimmer to it - somewhat like
polyester.  I'm not digging that so much.

So we are back to the drawing board.

I've dropped off these swatches
but I didn't have time to swap
them for others.  I'll pick up more next Friday!

PINK SATURDAY & IT"S GRILLIN' TIME!

Today is a double-decker post!

For starters 
we have our 

I was looking 
at the 
televisions
online 
everybody's favorite 
department store,
and stumbled upon this!
I went aha!
You know what this is perfect for...
Pink Saturday!



Actually, this would be pretty darn cute in my bedroom...

Which brings us to 
the second half of today's post.

Jacob prepared this 
delicious meal
for a his foods class.


He started by preparing his potatoes in tin-foil packets.
He buttered the foil so the potatoes 
would not stick.
He sliced them thin
S & P 'd them
added a pat or two of butter
and garlic powder and onion powder.
He sealed the packets 
and placed them on about a 350 degree grill
for about 30 minutes.


The pork tenderloin chops 
were seasoned with 
S & P, garlic powder
&
smoked paprika.
He placed them on the grill
in the indirect heat on the top grate
for about 20 minutes.
Or until the meat is cooked to  about 165 degrees.
They turn out so moist and tender!


Needless to say
Jacob received an "A"
on this project,
and if I have to say so myself
it was delicious!
